Terrific in my Tuesday

So my Monday was so busy that I’m having a Terrific in my Tuesday to make up for it!

My 3 day weekend was great and well needed. Unfortunately, I wasn’t able to get into any Crossfit classes. Waaahh! But that doesn’t mean I didn’t get a good workout(s) in because I did! I went to my second class at Title Boxing in Norwalk and it was even better than the first! I’m really loving it and plan to go to that same class this Saturday.

I spent lots of time with the “fam” in and outside of the gym. We had a celebration for my “sisters’” birthdays at Dolce Cubano in Stamford. It was fantastic! I kept it simple with a glass of Riesling. We ordered brussels sprouts and crispy artichokes for our apps. So tasty!

I ordered a grilled chicken salad (still fab) for my entree, because I had an icky experience with my lunch that day. The birthday girls both had salmon and my “mom” had a pulled pork dish. Because we’re such old ladies, we called it a night pretty early and headed home… but not before dessert! How else would you celebrate a birthday!?

We ordered a chocolate lava cake and tiramisu. Both were phenomenal!

The remainder of the weekend was low key and relaxing with another gym fam breakfast at Bedford Street diner. I ordered an egg white omelet with mushrooms, spinach and turkey sausage.

I cleared my plate and was damn happy!

Monday morning, I woke up and went to my regular gym class. I’m glad I did despite having the day off because I got so much accomplished! I hit up Target, my parents’, Home Goods, and Fairway. I came home, cleaned, cooked and prepped for the week. Seriously, by the time the evening rolled around I was feeling quite proud of myself.

Kale chips! I have never been able to successfully bake the perfect chip…until today! As you know, I have a tendency to burn anything I put in the oven, but not this time. I sprayed the leaves well with olive oil and sprinkled them with sea salt and Bragg’s nutritional yeast seasoning. So good!

My first attempt at Chocolate Chili (with ground turkey) turned out delicious! You do not taste the cocoa and the flavor is quite rich. Next time I plan to add a bit more chili as I thought it needed a bit of a kick.

Back to the work grind I go!

I LOVEEE that owl! I also am obsessed with Buddhas and that Buddha is amazing!! Sounds like a fabulous weekend!

$12.99! I love a good Home Goods find! I’ve had that Buddha for quite some time now but didn’t have an appropriate spot for it…until yesterday! So happy to have him back up! :)

It was quite an accomplishing weekend! You’ll love boxing! Definitely helps to get that aggression out. ;)

One of my favorite things to buy are decorations and art for my apartment! I’m running out of room, though. Love the Buddha!

Those kale chips look perfect. Mine always come up pretty burnt!

Def only chicken or turkey for me too! I usually dislike spicy food but lately I’ve been craving it. Strange, right!?

Your meditation spot is SOOO zen! I love it! Those desserts look good but the omelet has really got me drooling. Home fries yum and I adore turkey sausage!
You’re so silly, going to the gym crazy early on a day off, but that’s why I love you :D and you know I love productivity too!
UConn’s Student Union food court used to have a really awesome chocolate espresso chili! It had black beans and was made with some cocoa and espresso seasoning. It was incredibly unique and fab. I miss UConn’s soups, it’s something we did well. Your chili sounds similar!

ha, i love that you miss the food at UConn! Can’t say that I agree with you on that one, although I did enjoy snagging all the fruit and putting cereal in to go cups. :)

Well the student union food court was a whole diff story than the dining hall! tho you’d have loved whitney dining hall. everything was farm fresh,local, so many vegan options. bummed that it took me til my last year there to discover it.

Yum, Dolce Cubano! Went there for the sig other’s bday on the 14th, so good and soooo pretty! So curious as to how it will be in the summer!

I love that you’re local!

The sig other went to CrossFit in Norwalk for a while, but it is expensive! Personally I can’t justify spending that much for something so bare bones, but that’s just me.

I definitely want to go back. I’m sure it will be the new scene come Summer. Crabshell better close up shop!
I have friends that go to Crossfit Norwalk. Crossfit in general tends to be pretty expensive. However, Carozza Fitness just posted a Groupon for 5 or 10 of their “Just Results” classes which are crossfit inspired. I bought one! I love Groupon!
