My Monday would be a lot more marvelous if my lower body weren’t so damn sore!! Today, I may be a bit more thankful that my job requires a lot of sitting. Although it feels as if I’m sitting on 2 boulders (my butt cheeks.)
Reason for my soreness? Lots of lower body work this weekend. It started on Saturday with a new kettlebell workout that I had intended to complete on Friday, which just didn’t happen. I picked it up from the Fierce Forward Facebook page. It was pretty intense.
My quads were screaming by the second round! That evening, I knew I’d wake up Sunday morning NOT a happy camper. This was particularly not a good thing considering I had registered for my first Crossfit class on Sunday at 10am.
After a not so restful night, I woke up Sunday morning to find that not only was my lower body nearly immobile but the Crossfit WOD was overhead squats and pull-ups. Ouch! Despite my soreness, I completed the WOD and was thrilled with my first Crossfit experience. I have the full recap coming your way this week!
Not only did I get my workouts in at the gym, but I worked it out in the kitchen too! My marvelous eats for the weekend:
Grain-free sugar cookies from Chocolate Covered Katie – I made these last week but I had froze the leftover dough. The batch went over to my parents’ house. My mom loved them! I used the Paleo version which used almond meal, coconut oil and maple syrup. Sweet, but not overly sweet.
Paleo Banana Bread from Civilized Caveman Cooking. I knew this would be a hit when George said it was his most popular recipe. The rave reviews are completely valid! I’ll be picking up more bananas today so they’re ripe enough to make another loaf this weekend.
Chocolate cashew date balls. This is a modification on yet another Civilized Caveman Cooking recipe. I absolutely LOVE the date/nut combo. My first go at these included macadamia nuts. This time around, it was just cashews. However, I prefer the first version so it looks like I’ll be getting more macadamia nuts in my next Nuts.com order!
Baba Ganoush from the Make it Paleo cookbook. I love baba ganoush but have never made it myself so this was quite an adventure for me. Peeling the skin off the roasted eggplant was probably my favorite part. Looks super strange, right?
I brought some into work to use as an alternative to my hummus and carrots snack. It came out super creamy but I think I should have either used a larger eggplant or less lemon juice as the lemon flavor is a bit too apparent for me.
Are you noticing a trend with my recent eats? Lots of Paleo going on and I have to say my body is loving it!
One more marvelous item in my Monday, I’m taking a boxing class at Title Boxing in Norwalk tonight. Thanks to a lovely Groupon deal for only $19, I have 2 weeks of unlimited classes! Time to bust out my pink gloves as they haven’t gotten love from me in a while.

I love eggplant so much. Baba ganoush would be cool to make, and plus it’s just fun to say “baba ganoush”

The balls are exactly like that! I’ve actually been reading the ingredients on the lara bars and the new clif bars that I’ve been buying. If I can manage to replicate the exact ratio I’d be in heaven! Definitely my mission!
gahh baba ganoush is my favorite, my grandma makes a killer one and it has tons of garlic!
You know, I found another recipe that had roasted garlic and I should have added it. Definitely next time!

So envious of all your fitness adventures! Love a good leg day, LOL at the boulder butt sitting in the office chair, I have to say that gave me an odd image. I find when I have sore legs I dislike my desk job because argh, my legs just stiffen up like mad! I can’t wait to hear your Crossfit thoughts. The boxing sounds so fun! Oh boy I can’t wait to SoulCycle or FlyWheel with you!
Your baking is sure looking great. I hope some of that banana bread is waiting for me for our sleepover…gone are the days of ice cream paloozas haha, now we are grown ups eating paleo snacks!
